I learned this dish from my friend Sheena at Savsani. She is teaching me healthy, vegetarian dishes. Having grown up in an Irish Italian household in New Jersey, I did not eat food like this. I enjoy learning new ways to cook.
I especially love making this in the summer months when the corn is fresh from the farm.
¼ Cup of organic fresh corn kernels
¼ Cup of baby spinach
1/8 Cup of pine nuts
1 Tablespoon olive oil
Kosher Salt and fresh ground pepper to taste
¼ Cup of cherry tomatoes
Stir fry all ingredients. When corn is softened add tomatoes and serve warm.
