POACHED HALIBUT WITH MATSUTAKE MUSHROOMS
¼ Cup Fresh Ginger, peeled and sliced
2 Cloves Garlic, peeled and sliced
2 Stalks Lemongrass, peel away outer layers, slice in 1”pieces
½ Cup Yellow Onion, peeled and sliced
8 Green Beans, cut ends off and cut in 2” pieces
2 Cups of Mushrooms, (Matsutake are wonderful if you can find them) wiped clean and sliced thickly
2 Tablespoons Flat Leaf Parsley (or Cilantro), chopped
3 Cups Vegetable (or Chicken Broth)
2 Tablespoons Liquid Aminos
1 Halibut Steak
Kosher Salt and Freshly Ground Pepper
Wedges of Lime
Place all ingredients on bottom of a sauce pan.
Place Halibut on top of all of the vegetables.
Pour broth over.
Lightly salt and pepper.
Cover and cook on medium heat on the stove for approximately 20 minutes until fish is cooked through.
Serve with wedges of lime.
