1 Mango (peeled cut in 1" pieces)
1 Pineapple (peeled cut in 1" pieces)
6 oz. Cherry Tomatoes (cut in 1/2)
1 Garlic Clove (peeled and grated)
1/4 cup Red Onion (chopped)
1/4 cup Cilantro or Parsley (chopped)
3 Green Onions (sliced green part only)
3 Tablespoons Red Wine Vinegar (or Balsamic Vinegar)
Freshly Ground Pepper
Toss all ingredients and enjoy!
I love this served as a vegetable for Chicken Breasts.
Also nice as a dip for tortilla chips.
