ROASTED MIXED NUTS
Nuts are a very healthy snack. Here is a recipe for a good, easy, casual starter for
people to eat while standing around in the kitchen talking. I also add these to
my salads. You should experiment and see which herb you and your family and
friends prefer. I grow lots of rosemary but they are lovely with sage, too. You can
do one type of nut or two or even three types.
3 cups unsalted nuts
(try a combination
of almonds, walnuts,
1/2 cup fresh rosemary,
3 tablespoons olive oil
Kosher salt (optional)
1 Preheat oven to 250 degrees.
2 Place tin foil or parchment paper on a rimmed baking sheet. (Helps to have no dishes to wash.)
3 On the baking sheet, add nuts, rosemary, olive oil, and a pinch of salt (if using). Using your hands or a spoon, stir until nuts are evenly coated.
4 Bake for 30 minutes, stirring halfway through cooking.
Test for somewhat softened nuts that are golden in color. You may need 10 to 15 more minutes until they are roasted but not burned.
