COD WITH FUGGEDABOUTIT TOMATO GRAVY
This is such an easy fish dish to make and it’s healthy. Feel free to replace cod
with any fresh white fish that is available to you. This is one of the recipes I use
my Fuggedaboutit Tomato Gravy (page 20) for. I often just grab a quart out of
the freezer whenever I need it. This could also be done on your outdoor grill in
the summer months if you want to keep your kitchen cool.
3 pounds fresh cod
(or any other white fish)
1 quart of Fuggedaboutit
3 lemons, sliced
1/2 cup capers (optional)
Freshly ground pepper
Fresh Italian flat leaf parsley,
1 You’ll need a 9" x 13" baking dish. Preheat oven to 350 degrees.
2 Place fish in baking dish.
3 Cover fish with gravy. You may not need the whole quart—save some for other uses. Place sliced lemons on top. If using capers, add on top of lemons. Top with freshly ground pepper to taste. Cover tightly with tin foil and bake for 20 to 30 minutes.
4 Before serving, sprinkle fresh parsley on top and have extra lemons available for guests.
