¾ cup sugar
¾ cup unsweetened cocoa powder
1 teaspoon vanilla extract
Combine sugar and unsweetened cocoa powder.
Slowly whisk in 2 cups boiling water until the sugar dissolves and the mixture is smooth.
Stir in vanilla.
Chill in freezer then place in ice cream maker for 20 minutes (if you have one).
Or place in a 9”x13” baking dish. Cover in plastic then tin foil and place in freezer.
After 1 hour when it starts to freeze scrape it with a fork every 30 minutes or so for 2 hours. This makes a lovely granita which is refreshing after a heavy meal.
After spooning it out it must be served quickly as it turns watery fast. Serve it in martini glasses on a plate with some cookies on the side.
It’s crazy easy to make, with very few ingredients, and tastes like a Good Humor chocolate fudge pop.
