I have been experimenting with Red Quinoa lately. After last testing recipes for my Italian cookbook that I have been working on, I needed to get away from lasagna and polenta. For this breakfast, I made the quinoa according to the box. I then added freshly squeezed orange juice and the zest. Putting greek yogurt on top and drizzled honey made it truly delightful. I've had this at a restaurant where they put ricotta on stop instead of yogurt. Experiment and see which you prefer but I encourage you to try this. It's delicious and nutritious.
