I basically went through my pantry and refrigerator tonight and made up dinner with whatever I found. I've been experimenting with Red Quinoa and my husband and I loved the way this dinner came out. It's super healthy but alas I had to wash it down with a lovely California Cabernet Sauvignon - oh, well I'm not perfect! I made the quinoa according to the instructions on the box. In a pan I sautéed a litttle butter and a little olive oil. I found a shallot in my bottom drawer in the refrigerator, added a chopped red pepper, a green onion, and I found literally 3 mushrooms in there. Then I added the pre-made quinoa, which I made in the morning. To keep it moist I added some chicken broth. Then I literally threw in whatever fresh herbs I could find - basil, thyme, and flat leaf parsley. I wanted a protein source but didn't have any chicken in the frig so I pouched an egg. It made it nice and creamy on top of the dish. Just when I was about to serve it to my husband while watching CNN, I found 2 avocados and a lime so I added those. I'm delighted with this dish. Sometimes you just have to work with what you have at home and "play" with your food!
