ROASTED PEARS WITH RICOTTA AND HONEY
I saw this recipe on a Michael Pollan website. It has all of my favorite things – ricotta cheese, balsamic vinegar, and honey – oh my!
2 tablespoons unsalted butter
2 Bosc pears, halved and cored (I use a grapefruit spoon for this)
¼ cup balsamic vinegar
6 ouces ricotta cheese, at room temperature
6 tablespoons honey
Preheat oven 400 degrees.
Put butter in 9”x9” square baking dish (or 9”x13” if using more pears- measure one half per person).
Melt butter in oven (careful not to burn).
Take out of oven and place your pears cut side down in a single layer.
Roast until tender, approximately 20 minutes.
Turn over pears, drizzle balsamic vinegar over top and roast until very tender, approximately 20 more minutes.
Place pears in serving bowls, spoon ricotta on side of each and drizzle honey on it.
