This is a delightful, healthy dessert you can serve and your guests will appreciate your not serving something heavy and fattening. I especially like to end a menu with this after pork.
CITRUS SALAD WITH MINT SUGAR
2 White grapefruits
2 Pink grapefruits
6 large navel oranges
½ cup fresh mint leaves
2 tablespoons sugar
Peel all the skin and flesh off of your fruit. I find a serrated knife works best for this. Cut up segments and place in a bowl. Careful not to get any white parts in your salad and obviously no pits. Be sure to grab all the juices into the bowl.
(This can be done 1 day ahead). Refrigerate.
Place mint and sugar in food processor (or very finely chop by hand)– blend . (This can be done 1 day ahead). Keep out on counter.
Sprinkle mint and sugar mixture over fruit just before serving.
Serve in individual bowls.
