Simplest thing in the world to make and it's super healthy. Just peel and cut up root vegetables - here I used Carrots, Sweet Potatoes, and Butternut Squash. You could add Parsnips but today I just liked looking at all orange. Preheat your oven to 425 degrees. Place your vegetables in a cast iron pot (if you own one) or a rimmed cooking pan. Add olive oil, kosher salt, freshly ground pepper, and whatever herb you like - I used fresh Rosemary today but you could substitute Tarragon, Dill, Parsley, Marjoram - whatever you love. I use fresh whenever I can but you could use dried. I also throw in 2 peeled whole cloves of garlic because I love garlic but if you don't you could leave out. Growing up in an Italian household, we put garlic in dishes whenever possible!
Cook for 20 minutes and toss. Cook another 20-30 minutes until vegetables are soft but not mushy.
