SHRIMP AND PINEAPPLE STIR FRY
I’ve been experimenting with stir fry dishes. I’m enjoying the freshness, the colors, and the infinite combinations you can create. This has a sweet and spicy taste to it.
2 tablespoons coconut oil
1 cup fresh ginger, peeled and chopped (approximately 5”)
2 garlic cloves, peeled and chopped
12 shrimp, uncooked and peeled
1 cup green beans, ends cut off, cut in 1” pieces
1 tablespoon fish sauce (or tamari sauce)
½ cup vegetable broth
1 cup fresh pineapple, cut in 1” pieces
3 green onions, cut in 1” pieces
Red pepper flakes
½ cup white sesame seeds
Saute ginger over medium heat in coconut oil for approximately 3 minutes.
Add garlic to pan and saute another 1 minute, careful not to burn garlic.
Add shrimp and sauté for 2 more minutes each side.
Add green beans and fish sauce (or tamari sauce) sauté another 3 minutes.
Add broth and sauté for 3 minutes.
Add pineapple and sauté for 2 minutes and stir to combine.
Just before serving add green onions and red pepper flakes to taste.
Sprinkle sesame seeds and stir to combine before serving.
I like to serve this over black or jasmine rice. Place a piece of fresh lime in each bowl.
