Had guests over for a classic summer dinner. I baked cod in my marinara sauce and served with green beans sautéed in extra virgin olive oil and some cloves of fresh garlic. As a first course I spread a lemony basil pesto on each plate and spread fresh peaches and tomatoes on top. I was able to snag what I think may be the last of the fresh strawberries of the season so I just macerated them in a little bit of sugar and served in pretty bowls. All low in calories and high in vitamins but most especially pleasing for the eyes!
