It's summertime and the tomatoes are gorgeous. I make this simple salad all summer long. This time I used the cherry tomatoes but other times I use larger tomatoes and cut them up in smaller pieces. Cucumbers are so good for you and I add either red onion or shallots. Toss with your favorite vinaigrette (I use red or white wine vinegar and olive oil), add fresh dill, kosher salt and freshly ground pepper. You can make this in advance and leave in your refrigerator for an hour if you are entertaining. It looks beautiful in a bowl and guests and family members will love it.
