My son from Nashville and his girlfriend turned me onto chicken thighs. I have always liked dark meat and now I've noticed in the grocery stores chicken thighs are often offered. Prior to them mentioning how often they cook with them I honestly didn't notice chicken thighs offered much. Anyway, I marinated them overnight in a ziplock bag with freshly squeezed lemons, kosher salt and freshly ground black pepper. Put them on your grill for about 5 minutes per side.
I served this summer dish with "summer salad" which is tomatoes, cucumbers, shallots (or onions), tossed in a vinaigrette and add fresh dill, salt and pepper. The night before I made slow roasted tomatoes with fresh thyme and white beans tuscan style - sauteed with olive oil, garlic, and fresh sage (I realized I didn't plant sage this summer - a mistake - so I added thyme instead).
My husband loves this dinner and it took no time at all as I had made the beans and the tomatoes the day before. Some foods actually taste better the next day. Oh, I added freshly made guacamole to our plates because he loves my guacamole. Enjoy cooking this summer!
